Method

  1. Combine flour and water, mix until shaggy dough forms. Let sit 30 minutes to autolyse.
  2. Combine 2 eggs, melted butter, sugar, and salt. Whisk well together.
  3. Add butter mixture and yeast to dough, start kneading very goopy dough. Be patient, keep at it.
  4. At some point you'll be able to switch to the slap and fold method of kneading. Do this until the dough is smooth to your liking. It will stay sticky no matter how much you knead it, so just go for smoothness.
  5. Place dough in greased container with airtight (or at least moisture-proof) cover and let rise for 1 hour. It will get very big. :) Butter and flour two loaf pans.
  6. Turn dough out onto floured surface and pat into rectangular shape. Divide in half, shape each half into loaf shape and place into buttered and floured loaf pans.
  7. Place pans into large plastic bag or other moisture-proof enclosure and let rise again until about 1 inch above the pan rim.
  8. Bake for 30 minutes at 220°C (425°F) with convection fan, or until internal temperature reaches 90°C (200°F).
  9. Turn loaves out of pans onto wire rack and let cool for at least 1 hour.
  10. Enjoy! :)

The texture and flavor are somewhat rich and maybe brioche-like, except not very sweet. It toasts nicely, and makes a really good grilled cheese. 😋
